The sweet flesh of Alaskan crab is layered with apples, celery, and avocado for a delightful ‘mille-feuille’ of bright flavours. Sea bass is baked in a
buttery crust alongside truffled pomme puree and a spicy mango ‘rougail’, while tender monk fish is served atop a heady saffron risotto, with grilled Parisian mushrooms and a creamy mustard-spiked sauce.
